Diary part 22


This week's program will open with visitor requests - I need your help and you know who are.

Shannon needs recipes and info about using a convection oven.

BB is looking for "A stir-fry called (if I remember correctly) Sunburst Stir Fry. Among other ingredients it contained boneless breast of chicken, carrots, green peppers, onions, celery (maybe), pineapple chunks, and spaghetti. The liquid from the pineapple was mixed with corn starch, and pepper and ginger were included in the seasonings."

I think what we need for the chicken thing is one of those files that will spit out a recipe using ingredients entered. I've tried a few - most of them seem to come up with everything but what I ask for. Anyone have recommendations?

VIRUS ALERT

Sears is MS occupied - speaking for those of us who are older than dirt (read that middle baby boomers) - this is disturbing. K-Mart sorta popped up and nobody really paid attention - nice place to save a buck - on stuff ... nothing that really matters - paper towels can only be expected to last so long.

Sears ain't exactly a particulary snazzy place to shop but it's an institution. Is nothing sacred? As one observer put it, why isn't herself at Neiman's ... possibly the leader of the wannabes is one ... hmmmm.

So sue me, I'm a label snob - in reverse. I always loved the joke about wearing someone else's name on one's derriere* too. Heaven help us if conditions ever get that far out of control again. Haven't have they? I really must get out more often :)

How's your holiday? It's about as lazy as it gets around here. I've got a whole week off coming up too - might get motivated and cook two nights in a row. I said might ...

I have been getting the most tempting ideas from lists. Signed up for Arwen's after she sent in the Chicken Creole (no relation to John, that I know of anyway) last week. It was way too good as a for instance and just as easy as it looks. Any sort of a baking dish should work, the one I had handy happened to be a souffle* pan (I think, and no I never have and don't intend to, it was a garage sale deal).

TUNA & BISCUITS

2 cans of tuna, drained
1 can cream of mushroom soup
1 can refrigerated biscuits
1 cup milk
1 cup cheddar cheese, grated

Preheat oven to 400 degrees. Place biscuits in greased 13x9x2-inch baking dish. In a medium-sized bowl, mix soup, tuna, and milk. Pour soup mixture over biscuits and sprinkle cheese on top. Bake for 25 minutes. Go to Creative Homemaking to get on the list.

(If you don't care for tuna or mushrooms (you know where they grow don't you?) try it with chicken and cream of something else.)

Wait a minute, I do know something else - chops marinated in Teriyaki sauce go peachy with:


Popeye Pie

10 oz. fresh spinach or 12 oz. frozen
1/4 c onion; chopped
2 eggs well beaten
2 tb Parmesan cheese, grated
1 cup 2% milk
1/2 tsp. salt
1/3 cup celery chopped
1/2 tsp. nutmeg

Wash fresh spinach and discard stems. Steam in a covered saucepan over low heat until the leaves are wilted. Drain in a colander or sieve, press out liquid and chop spinach. (Or thaw frozen chopped spinach and press out liquid.)

Mix remaining ingredients together, then fold in spinach. Pour mixture into a well greased 9 inch pie plate. Bake at 375 for 45 minutes or until a knife inserted in the middle comes out clean. Cut into 6 wedges and serve warm.

1/6 recipe - 71 calories, 1 protein choice, 1/2 fruit & vegetable choice - 5 grams carbohydrate, 6 grams protein, 3 grams fat

Got that one from Arwen's list too, after someone asked for ideas for diabetics. I used dried onion and celery flakes - and I didn't drain the spinach as well as I should have thinking the dry stuff needed the extra liquid. It didn't ... I had a little puddle but it still tasted great.
