Welcome to YOU my special Friends...!!!
Sorry this issue of sMiLeS from KaThy is a bit late.
A lot of you have written to me asking for your issue of
sMiLeS and I love you for this....but, this issue has
been a difficult one to put together for me.
Thank you for being so patient.
Several things have been going on in my life that have caused me
to get behind in publishing this issue of sMiLeS....
But just to let know that I am back up again, full of sMiLeS,
and happy to be Kathy again.
I just had to do what it is that I always tell others to do,
and that is, to look in the mirror and tell myself that no one can
take away my special gift to myself and others, and that is my SMILE....
So you too please remember that when things get you down,
take time and look in the mirror at yourself,
and say these same words to yourself:
"NO ONE CAN TAKE AWAY MY SMILE"
as it's the one Gift from God that only you can deprive yourself of...
And with that said, let's get onto some fun stuff and make you sMiLE...!!
I am so happy to Welcome all the new sMiLn buddies that have
joined this past month. We just keep growing and growing.
I am going to be a Grandma again January 18th. My middle daughter
Michelle who married in 1995 is expecting. Our family is so excited!
Janel (my oldest daughter) her kids Chelsey, Brandon, and Bailey
are growing up so fast....they are now 2,5, and 6. Gosh how I love them so...
I love kids - maybe this comes from being a single parent for so many years.
And then next inline to have kids will be Brenda (my youngest daughter who just got married this past April.) Brenda is a second grade school teacher.
I am a very lucky and proud Mom. I am very close to all three of my daughters.
I wouldn't trade in what I have for all the money in the world.

although up to its neck in hot water, continues to sing !!!"

A Child Learning to Pray

A mother was teaching her 3 year old the Lord's prayer. For several
evenings at bedtime she repeated it after her mother. One night
she said she was ready to say it by herself. The mother
listened with pride as she carefully enunciated each word,
right up to the end of the prayer. "Lead us not into temptation,"
she prayed, "but deliver us some e-mail, Amen."
A large green frog hops into a bank, jumps up on the counter and says to the teller, "I want a loan."
The teller says, "You'll have to see the loan officer. Her office is down the hall and the name on the door says "Patricia Wack."
So the frog hops off the counter, down the hall and to Mrs. Wack's office.
He jumps up on her desk and says, "I want a loan." Mrs. Wack, quite puzzled, gives the standard line, "We must have something to secure the loan, some collateral."
At that the frog pulls out a ceramic lion, places it on her desk and repeats that he wants a loan.
So Patricia picks up the ceramic lion, goes in to the bank president's office, places the ceramic lion on his desk, and tells him, "I have this frog in my office who says he wants a loan, and this is what he has to secure it. I don't even know what this thing is."
The bank president looks at the ceramic lion, looks at Mrs. Wack, looks back at the ceramic lion and finally says, "It's a knick-knack, Patty Wack. Give the frog a loan."

The Dalmation Dog

A nursery school teacher was delivering a station wagon full of kids home one day when a fire truck zoomed past. Sitting in the front seat of the fire truck was a Dalmation dog. The children fell to discussing the dog's duties. "They use him to keep crowds back," said one youngster. "No," said another, he's just for good luck. A third child brought the argument to a close. "They use the dogs," she said firmly, "to find the fire hydrant."
PINEAPPLE PUMPKIN BREAD
1 1/2 cups flour
1/3 cup brown sugar
1 tsp. baking powder
3/4 tsp. pumpkin pie spice
1/4 cup crushed pineapple in juice
1/2 cup canned pumpkin, mashed
2 tbsp. egg substitute
Lightly spray 3 mini loaf pans with notfat cooking spray.
In a medium bowl, combine flour, brown sugar, baking powder
and pumpkin pie spice and mix until blended.
Add pineapple, pumpkin and egg substitute and mix until dry
ingredients are moistened and batter is smooth.
Divide batter between loaf pans and bake in 375 degree toaster oven
for 35-40 minutes, until knife inserted in center comes out clean.
Great gifts and you can freeze and keep for unexpected company
CHERRY SQUARES
1 pkg. purchased white cake mix
1 1/4 cup rolled oats
1/2 cup margarine, divided (1 stick)
1 egg
1 can Cherry pie filling (21 oz)
1/4 cup firmly packed brown sugar
1 cup chopped walnuts, (optional)
In large bowl, combine cake mix, 6 TBSP. of the margarine
and 1 cup of the rolled oats.
Mix until crumbly. Reserve 1 cup crumbs for topping.
To remaining crumbs, add 1 egg and mix until well blended.
Press into prepared pan. Pour cherry pie filling over crust,
spread to cover. To reserved crumbs, add remaining 1/4 cup
rolled oats, 2 Tbsp. margarine, nuts (if desired) and brown sugar.
Beat until thoroughly mixed. Sprinkle over cherry mixture.
Bake at 350 for 30-40 minutes or until
golden brown. Cool completely. Cut into small squares.
5 MINUTE COCONUT CREAM PIE
1 Tbsp. sugar
1/2 cup milk
1 pkg. (3 oz.) cream cheese, softened
1 1/3 cup flaked coconut (like Baker's Angel Flake)
1 container (8oz.) Non-dairy whipped topping, thawed
1/2 tsp. almont extract (optional)
One 9in. ready made graham cracker crust
Combine cream cheese, sugar, milk, and coconut in blender or
food processor. Cover and blend on low speed for 30 seconds.
Fold in whipped topping, add extract if desired.
Pour into ready made pie shell and chill for at least 2 hours
before serving. Refrigerate leftovers.
Strawberry Sundae Pie
Serves 8 to 10

Ingredients:
1 1/2 cups Ice Cream Cones, Crushed
(about a dozen Sugar or Waffle-type cones)
1/2 cup Butter or Margarine, Melted
1/4 cup Granulated Sugar
3 1/2 cups Fresh Strawberries, Rinsed and Hulled
1 quart Vanilla Ice Cream
1/3 cup Malted Milk Powder
1 1/2 cups Fudge Ice Cream Topping, Softened

Crush ice cream cones to a finely crumbled texture in a blender or food
processor. In a small mixing bowl, combine crushed cones, melted butter,
and sugar. Press the mixture evenly onto the sides and bottom of an
ungreased 9-inch pie plate. Freeze for at least 30 minutes to firm.
Place 3 cups of strawberries in a blender or food processor and puree.
Slice or chop the remaining strawberries in a small bowl. Combine
strawberry puree and sliced or chopped strawberries in a large mixing
bowl. Add ice cream and malted milk powder. Stir to blend the mixture.
Pour strawberry filling into prepared pie crust and freeze until the ice
cream is solid again. (This recipe is best prepared one day in advance of
serving because overnight freezing is recommended.)
Gently warm the fudge topping in a small saucepan filled with water, or
microwave for a few seconds to make sure the sauce is easily spreadable.
Frost the strawberried ice cream with the fudge sauce to within 1 inch
of the edge of the pie. Return to the freezer for at least 2 hours.
Remove the pie from the freezer about 20 minutes prior to serving.
Garnish with halved fresh strawberries, chopped walnuts or almonds, or
dots of freshly whipped cream, if desired. Slice pie and serve.

What You Are Is As Important
As What You Do
It was a sunny Saturday afternoon in Oklahoma City. My
friend and proud father Bobby Lewis was taking his two little
boys to play miniature golf. He walked up to the fellow at the
ticket counter and said, "How much is it to get in?"
The young man replied, "$3.00 for you and $3.00 for any kid
who is older than six. We let them in free if they are six or
younger. How old are they?"
Bobby replied, "The lawyer's three and the doctor is seven,
so I guess I owe you $6.00."
The man at the ticket counter said, "Hey, Mister, did you
just win the lottery or something? You could have saved yourself
three bucks. You could have told me that the older one was six; I
wouldn't have known the difference." Bobby replied, "Yes, that
may be true, but the kids would have known the difference."
As Ralph Waldo Emerson said, "Who you are speaks so loudly I
can't hear what you're saying." In challenging times when ethics
are more important than ever before, make sure you set a good
example for everyone you work and live with.

How To Be Happy
