I will have recipes here, changing them at least monthly. I have made up some of my own, plus Mom had a lot of great recipes that I happened to get hold of somehow while young.
My Mother's Banana Nut Bread
½ Cup Margarine
1 Cup sugar
2 Eggs
1 tsp vanilla
½ Cup Sour Milk (if it isn't sour, make it sour by putting in a Tbl of vinegar before adding)
2 Cups Flour
½ tsp salt
1 tsp Soda
3 medium, very ripe Bananas
1 Cup of Nuts
Makes one loaf, or one tall juice can (46oz)
Doubled recipe
1 Cup Margarine
2 Cup sugar
4 Eggs
2 tsp vanilla
1 Cup Sour Milk (if it isn't sour, make it sour by putting in a Tbl or 2 of vinegar before adding)
4 Cups Flour
1 tsp salt
2 tsp Soda
6 small, or 5 large Bananas
2 Cup of Nuts
Makes 2 loaves or 2 tall juice cans (46oz)
Preheat oven to 350º.
Grease and flour loaf pans or juice cans.
Cream margarine and sugar together.
Add eggs, sour milk and vanilla, stir.
Stir in flour, soda and salt.
Thoroughly mash the bananas, chop nuts
(I chop them very fine). Add bananas and nuts, stir.
Fill 2/3 full. Bake for one hour.
Salt is optional. I use whole wheat flour for half of the flour.
My mom sometimes used bananas that had turned black.
Tasted great! The darker they are, the sweeter they are.
I use walnuts, but any will do. I have used peanuts occasionally.
If you use juice cans, it's fun to eat the top, then slice the rest!
