HlMgerbread

1-1/2 cups all purpose flour
1-1/2 teaspoon nutmeg
1/2 cup dried apricots, snipped into small pieces
1/2 cup soft butter
1/4 teaspoon salt
1/2 cup sugar
1 egg
1/2 teaspoon cinnamon
1/2 cup molasses
3/4 teaspoon ginger
1/4 cup buttermilk

Turn oven to 350 degrees. Generously grease an 8x8x2 pan or a pie pan. Mix together flour, salt, soda, cinnamon, ginger, and nutmeg and sift. Add snipped, dried apricots and stir the pieces into mixture. Set aside. Cream butter in a separate large bowl, add sugar and egg and beat until smooth and fluffy, using a rotary beater or wooden spoon. Add molasses and beat vigorously another 2 minutes. Add flour mixture and buttermilk alternately in 3 or 4 portions,  Bake in center of oven for 35 to 40 minutes, or until center springs back.  

Remove from oven and place on cooling rack. May be served warm or cold.  Add a dollop of whipped cream if you like.
