Corn Fritters

1 cup fresh corn cut off the cob or frozen corn

2 eggs, well beaten

1/2 teaspoon salt

4 Tablespoons flour

2 Tablespoons fine saltine cracker crumbs

1/2 teaspoon baking powder

1 teaspoon sugar

Pinch of cayenne pepper

Pinch of nutmeg

Cooking oil

Mix together the corn and eggs. Mix the dry ingredients together and add to the eggs and corn. Drop by large spoonfuls

onto a hot griddle which you have greased with the oil. Cook until firm and golden brown on the first side, then flip over

to the other side and cook until golden brown. Drain on paper towels. Serve hot.
