Fry You Some Chicken!

1 nice-sized frying chicken, rinsed and cut into pieces

1 Tablespoon Paprika

2 teaspoons salt

1/2 teaspoon black pepper (or to taste)

Oil for Frying

1 cup all purpose flour in a paper bag

Using a large bowl, pour the lemon juice onto the chicken pieces. Evenly distribute the Paprika, salt and pepper.  Allow seasoned chicken to marinate in the refrigerator for at least an hour, turning pieces so that all may have an opportunity to be at the bottom of the bowl with the lemon juice.  You can season and refrigerate the chicken overnight if you like, allowing the seasoning to penetrate the chicken.

In a large, heavy skillet, such as cast iron or an electric skillet, pour enough vegetable oil in to reach a depth of about 1 inch.  Heat the oil over medium high or high heat until it is very hot.  If  you are using an electric skillet, turn the temperature up as high as the gauge permits. Removing pieces of chicken from the bottom of the bowl in which the chicken has been marinated, place 3 or 4 pieces of chicken in the bag containing the flour.  Shake the bag until the chicken is well coated with flour.  Lift the pieces out one at a time, shaking it to remove excess flour.  Place the chicken piece into the hot oil.  Repeat until you have all the pieces of chicken in the skillet. Place a top on the skillet and fry for about 15 minutes on one side.  Turn the chicken pieces over and place the top back on the skillet, continuing to fry for another 15 minutes.  Remove the top, turn the lighter side of the chicken down into the hot oil to brown evenly.  Leave the top off and continue to monitor the chicken closely.  Once it is golden brown, remove the chicken to a thick piece of newspaper on top of which you have placed paper towels.  

Serve hot. Serves 4 people.
