1 cup soft butter
1 cup peanut butter
1 cup brown sugar
1 cup granulated sugar
1 Tablespoon vanilla flavoring
2 eggs
1-1/2 cups sifted flour
1/2 teaspoon baking soda
1 teaspoon salt
1 Tablespoon baking powder
1/2 cup dry oatmeal
1 6-ounce pkg semi sweet chocolate chips
1 6-ounce pkg butterscotch chips
1 cup chopped pecans or walnuts
1/2 cup flaked sweetened coconut
Turn your oven to 350 degrees, place rack in center of oven.
Cream together the butter and peanut butter, add the sugars and beat until light and fluffy. Add the Vanilla flavoring and eggs, beating well.
Mix together the flour, soda, salt and baking powder and gradually beat into the above mixture, beating well after each addition. Stir in the dry oatmeal.
By hand, stir in the chocolate and butterscotch chips, nuts and coconut, stirring well to distribute evenly.
Form into balls the size of walnuts and place on a greased cookie sheet at 350 degrees fahrenheit for about 12 minutes.
Remove pan from oven. Use a spatula or pancake turner to carefully lift the cookies from the cookie sheet onto a rack to cool. Store in an airtight container.
