Slumgullion

3 Tablespoons butter OR olive oil

1/2 cup chopped onion

1/2 cup chopped celery

2 cloves garlic, minced

1 pound spicy link type sausage, sliced into 1-inch chunks

3 cups water OR chicken broth

1-1/2 cups uncooked long grain rice

1 teaspoon salt

Dash of black pepper

1/2 pound shrimp, cleaned, deveined, and cut in half lengthwise

1 medium bell pepper, cut int 1/2 inch squares (optional)

In a large skillet over medium high heat, heat the butter or oil.  Add onion, celery, garlic and sausage, and cook, stirring occasionally until onion is tender and sausage is browned.

Add the water, rice, salt and pepper.  Bring to a boil, then turn down to simmer and cook until the rice is tender, for about 15 to 20 minutes.  

Add the shrimp and bell pepper (optional).  Cook for another 5 to 10 minutes, covered, until the shrimp is opaque and is done to your liking.

Serve hot.  About 6 servings.
