Sweet Potato Croquettes
2 cups boiled, steamed, or baked sweet potatoes (or yams) mashed
2 egg yolks (set aside egg whites)
1/4 cup brown sugar
1 teaspoon nutmeg
1/2 teaspoon cinnamon
Mix together and set in refrigerator until cold and firm. Remove from refrigerator and form into 8 small, oval patties.
2 egg whites from above, beaten until frothy
1/2 cup fine bread bread crumbs
1/4 pound butter heated in a skillet to medium-high heat (don't burn the butter)
Dip the patties into the egg whites, then into the bread crumbs, then transfer to the hot butter and cook until
well browned on each side. Remove and drain.
Serve hot.
