Today's mighty oak is the nut that held its ground. Nuts to y'all ;-)
Ye olde range war just ain't whut it used to be ... a fine howdy do for two gray mares (nuttin' personal Cindy). She's cookin' in Vegas - I'm still kitchenless (in Dubuque, soon to be Midwest elsewhere ... if one of them Nawthers don't blow the broom off course - and no I don't know what happened to Omaha). Any which, the next round will have to wait til brain thaw or other functional dislodge occurs.
Kinda like hiccups, thought it might help.
I swear I'm stuck in a holiday loop - but I'll get back to that (if I remember). Consider this ... as the gray matter ejects, it applies directly to the hair. Case closed.
Are we thinking SUGAR??? Alrighty then ...
Praline Squares
24 whole graham crackers
1 cup (2 sticks) butter - NOT MARGARINE
1 cup firmly packed brown sugar
1 cup chopped pecans or walnuts
Preheat oven to 350. Arrange the crackers one layer deep on an ungreased 10 x 15 rimmed cookie sheet. In a small saucepan, combine the butter and brown sugar; bring to a boil, stirring constantly, for two minutes. Stir in nuts and mix well. Spoon mixture over the graham crackers. Bake for 10 minutes. Remove from the oven and let stand for two minutes. Cut into squares while still warm.
Swiped the pralines ... next goodie was a legit send-in (hint, hint ...)
From Bilv:
Surprise Cookies
Something different and "quick" for kids (of all ages). Take the premade chocolate chip cookie dough you get in the grocery store and roll a "good-size" chunk of it around a miniature peanut butter cup or bite-size 3 Musketeers bar. Bake at the temperature on the package til light brown. (It takes a few minutes longer than the regular cookies because these are bigger and thicker.) The cookies will look a little like "hats" and the kids love the surprise inside!
Most appropriate here (thanks Rina).
This diet is designed to help you cope with the stress that builds during the course of the day.

REMEMBER: STRESSED SPELLED BACKWARDS IS DESSERTS!
I do apologize for bustin' the LTF rule again. However, a couple of the following have only two and three ingredients - see how it all evens out? Actually, I'm savin' some of these for my own use later - publishing is one way (theoretically) not to lose them - famous last words.
Maple Sweet Potato Salad
1-1/2 lbs. sweet potatoes, peeled and cut into 1/2 inch cubes
3 Tbs. maple syrup
2 Tbs. orange juice
2 Tbs. lemon juice
3 Tbs. olive oil
1/4 cup cilantro or parsley (optional), chopped
1-1/2 Tbs. candied ginger (optional), chopped
Place potatoes in a steamer basket over boiling water. Cover saucepan and steam 8 - 10 minutes until tender. Transfer to a large baking sheet. Spread out to cool. Combine next four ingredients in a jar with a tight fitting lid. Season with a little salt and pepper. Place spuds in a bowl. Add dressing and remaining ingredients. Toss. Cover and chill until ready to serve.
Yogurt Cheese
Spoon the yogurt into a coffee filter or cheesecloth-lined strainer; place over a bowl. Refrigerate, covered, at least 5 hours. When yogurt is drained to remove the whey, or liquid, it becomes a thick, spreadable cheese. Flavor it with herbs, spices, garlic or even chopped dried fruits and honey.
Stuffing Patties
Add 2 eggs, 1/4 c. milk, 1/2 c. flour to 1 - 1 1/2 c. leftover stuffing to make a dough. Form patties, fry in a bit of oil - serve with gravy.
Cranberry Stuffed Apples
Fill apples with leftover cranberries/sauce before baking.
Chili Mac Bake
Mix leftover chili with boxed mac and cheese. Top with some more cheese. Bake at 350 til bubbly.
From Jimmy the Vike:
(From The Flamingo Times Weekly Newsletter.)
Sheepherder Cabbage
In a cast iron skillet fry up three strips of bacon. push bacon to the side or eat them (cook's dibs you know!). Next cut a head of cabbage in half. Turn heat down under the skillet and place both halfs in the skillet flat side down. Pour in one 12-ounce can of your favorite beer (don't worry, you still have 23 left!). Simmer for about 35 minutes or until tender. ENJOY!! Most people can't believe how simple this is and how much flavor it contains. WE enjoy this dish out here in the middle of Utah - we also enjoy this page (The Times) but all of us cowboys kinda feel left out on your north/south thing. You see, we weren't a state when you had your dispute in the late 1800's. Then when you settled your differences you got together and sent Johnson's army out here and planted that dang Johnson's grass everywhere and we've been wondering what we ever did to deserve that!! Keep up the wonderful page, we look forward to it evey week. (Don'tcha love readin' other people's mail?)

*Toot!Toot!
I liked the Vike's style, told him so and whaddya know ... Just off the top of the old bean there is a simple dip that even the most inept person who is on their own can tackle. You don't even need dishes for this one but you should have a spoon or at least a stick. Buy a container of cottage cheese - buy a bottle of picante sauce (I like Pace) - mix both the ingredients together in a bowl. You don't have a bowl? Then scoop some of the cottage cheese out and give it to the dog or cat and then use the cottage cheese container for a bowl. Stir with a spoon or stick - great with any kind of chip. I will communicate more later. (Betcha he will too if y'all say hey.)
Also from The Times: (Go see JW, jes cuz he's a sweetie.)
Pork Chop Casserole
4 - 6 chops
salt
pepper
2 tblsp salad oil
1 tsp parsley flakes
1 can cut green beans - drained
2/3 bag frozen country style fries
1 can cream of mushroom soup (undiluted)
1/2 cup dairy sour cream
Preheat oven to 400. Sprinkle chops with salt and pepper. Brown in hot oil. Remove from pan and drain off drippings. In same skillet, over low heat stirring constantly, heat soup, sour cream and parsley. Do not boil. Place frozen potatoes in shallow 2 qt. casserole. Top with beans. Pour on sauce and top with chops. Cover and bake for about 45 minutes. You can use more green beans if you prefer or use more soup according to taste - or use cream of chicken instead of mushroom.
Fruit Pudding
3/4 cup sugar
1 cup flour
1 tsp. baking soda
1/4 tsp. salt
1 egg, well beaten
2 cups fruit cocktail or other fruit, well drained
1 cup brown sugar
1/2 cup nuts (optional)
Sift together sugar, flour, baking soda, and salt. (Queen C note: think self-rising flour.) Add egg and fruit. Pour into a greased 8 x 12 inch baking pan. Mix together brown sugar and nuts and sprinkle over batter. Bake 1 hour at 300. When cooled, serve with whipped cream.
Stuffed Burger Bundles
1 cup seasoned stuffing mix
1/3 cup evaporated milk
1 lb. hamburger
1 can cream of mushroom soup
2 tsp. Worcestershire sauce
1 tbsp. catsup
Prepare stuffing according to directions on package. Combine milk and meat. Divide into five patties. Pat out and put stuffing in center, fold and seal. Place in 1 1/2 quart casserole dish. Combine remaining ingredients and pour over meat. Bake at 350 for 35 to 50 minutes.
