I am in a particulary irreverent mood - ordinarily I actually enjoy starting a holiday morning wrestling with a turkey. One of my traditions is really loud rock and roll ... there will be no sleeping when I'm up to my elbows in guts.

If all you see is a big space above ... that would be aol doing it's best to make me crazy again. S'posed to be a leaf falling - very cool effect - wish I could remember where I found it.

Surprise Turkey Dressing

2 cups bread crumbs
1 cup chopped celery
1 Tbs. salt
1/2 cup minced onion
1/2 cup unpopped popcorn

Sauté celery and onions in butter until limp. Mix with rest of ingredients and stuff turkey. Roast at 375 for 4 hours or until the popcorn blows the ass out of the turkey. A real oldie goldie ... jes like him who sent it - thanks Paul.

The Thanksgiving cooking plans have taken a deranged turn, Bubba (that's her Bubba, not mine) getting into high weirdness mode and threatening to stuff the turkey with fruits, nuts, shrimps, sausages, and/or nopalitos. There's a suspicious quart jar of olives in there, too. I keep giving my opinion, which is probably a bad idea, as this is just one of those things that's crept up his skirt and bit him on the butt and the more I protest, the more willfully eccentric he's gonna get; I think he envisions me tucking into it and saying, "Ah, how wrong I was! This brandy bacon pistachio maple syrup prune stuffing makes the turkey so moist and delectable!" The real danger, of course, is that it will taste just fine, and then everyone he knows will have to listen to a month's serenade every year about his famous recipe for jamming 30 bucks worth of groceries into a turkey and slow-cooking for 24 hours to get a vaguely interesting flavor. Really he should just shove in some cilantro on top of the whole ball of wax and peddle it to some yuppie magazine as Southwestern cuisine.

Sun-dried tomatoes, anyone?

In another column Aussie said she was going to make her "killer turkey turnovers" - if I was going to try this I'd use the premade dough (for pie shell).

Turkey Turnovers

3 tablespoons butter
2 teaspoons minced onion
3 tablespoons flour
1/4 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon celery salt
1/8 teaspoon ground ginger
1 cup milk
2 cups chopped cooked turkey
Plain pastry made from 2 cups flour

Preheat oven to hot (450º). Melt butter; add onion and flour and stir until smooth. Add the seasonings. Slowly add the milk, stirring constantly, and cook until thickenend. Add the turkey; adjust the seasonings. Let mixture cool.

Meanwhile, roll out the pastry to one-eighth-inch thickness. Cut dough into three-inch circles or squares, place a rounded tablespoon of the turkey mixture over one half and fold the other half over the filling, pressing the edges together. Or put the turkey mixture in the center of a square or circle, place another square or circle over the top and press the edges together to seal. Slash the top crust to allow for the escape of steam. Place on a cookie sheet and bake until attractively browned, or about 20 - 30 minutes.

Can serve with mushroom sauce or a creamed vegetable.

Impossible Chocolate Pie

2 eggs
1 c milk
1/4 c butter
1 ts vanilla
2 oz melted chocolate
1 c brown sugar
1/2 c Bisquick

Preheat oven to 350. Put everything in blender for 1 min. Pour into pie plate. Bake for 30 minutes until tests done with knife. Cool completely and top with whipped cream.

Cranberry Sweetie

3 cups whole cranberries, fresh or frozen
3/4 cup sugar
2 1/3 cup miniature marshmallows
1 (8 1/2 oz.) can crushed pineapple, drained
1/2 cup chopped nuts
1 cup whipping cream or Cool Whip®

Put cranberries in food processor and coarsely chop - frozen berries chop
easier. Add sugar and chill for at least 2 hours.
Add marshmallows, pineapple and nuts. Whip cream (or use Cool Whip) and
fold into cranberry mixture.
Spoon into bowl; cover and refrigerate. Can also be frozen in 8" square dish.
Serves 6-8.

Turkish Meatballs


1 lb (450 g) lean ground lamb or beef
1 medium onion, finely chopped
1/4 cup (60 ml) uncooked rice
Salt and freshly ground black pepper to taste
3 cups (750 ml) water
1 cup (250 ml) olive or vegetable oil
2 eggs, beaten

Combine the meat, onion, rice, and salt and pepper and mix thoroughly. Form into meatballs about 1 inch (2.5 cm) in diameter. Bring the water to a boil in a saucepan and add the meatballs. Reduce the heat and simmer uncovered for 30 minutes, adding more water if necessary. Remove the meatballs to a plate and discard the water. Heat the oil to a temperature of 350F (180C), or until the surface shimmers. Dip the meatballs into the beaten egg and deep fry for about 5 minutes, turning as necessary, until browned on all sides. Drain on paper towels and keep warm until served. These may be served on wooden skewers. Makes about 16 meatballs.

Japanese Bacon Wrapped Shrimp


12 whole large shrimp, shelled and deveined
4 slices bacon, cut into thirds
2 Tbs (30 ml) soy sauce

Wrap the shrimp in the bacon pieces and fasten with toothpicks. Place on a baking sheet and drizzle the soy sauce over them. Bake in a preheated 350F (180C) oven for 15 to 20 minutes, until the bacon is cooked to the degree of doneness you prefer. Makes 12, to serve 4 to
6 as an appetizer.

Hokey Mashed Potato Pokey

You put mashed potatoes in.
You get the sour cream out.
You put the bacon bits in . . .
And you stir 'em all about.

They're jazzy mashed potatoes and you serve 'em all around. That's what it's all about. (I think the Kraft people have a little too much time on their hands.)

4 cups hot prepared mashed potatoes
1 cup Breakstone's or Knudsen sour cream, any variety
2 Tbsp. Oscar Mayer Real Bacon Pieces or Bits*

Mix all ingredients. Serve immediately. Garnish with fresh chives, if desired. Kraft: Recipe Card
