Jeff’s Ultimate Chili Trio

 

1 lb. lean ground beef or

1 lb. ground turkey or

12 oz. pkg. veggie crumbles/burger substitute

 

1 large onion (color is up to you, cut to your preferred coarseness)

1 large bell pepper (color is up to you, chopped)

4 cloves garlic (chopped)

 

Combine above ingredients in a five quart sauce pan and cook until the meat is browned.  Add ingredients listed below and stir well.  Cover and heat to boiling.  Reduce heat and simmer, covered, two hours, stirring every 15 minutes.

 

1 can (28 oz.) diced tomatoes, undrained

1 can (6 oz.) tomato paste

1 can (8 oz.) tomato sauce

1 can (15 ½ oz.) kidney beans, undrained

1 can (15 oz.) black beans, undrained

1 can (11 oz.) vacuum-packed corn, undrained

1 can (14 ½ oz.) beef broth or chicken broth or vegetable broth

1 can (11 ½ oz.) V8

1 cup (8 oz.) favorite beer

1 shot (1-2 oz.) favorite whiskey

1/2 tsp. pepper sauce (Tabasco)

2 tsp. chili powder

2 tsp. cumin

1/2 tsp. dill

1/4 tsp. oregano

1/4 tsp. marjoram

1/4 tsp. basil

1/4 tsp. thyme

1/2 tsp. cayenne pepper

1/2 tsp. black pepper

1/4 tsp. salt

1 tbsp. Instant coffee

1 tsp. cocoa

1 tsp. sugar
