1/2 Cup Quick cooking oats -- uncooked
1/2 Cup Butter -- softened
1/4 Cup Toasted wheat germ
1 Tablespoon Orange peel -- grated
1/2 Cup Brown sugar -- packed
2 Eggs
4 1/2 Ounces Blanched Almonds -- Whole
1/2 Cup Coconut -- shredded
Preheat oven to 350. In large bowl with mixer at low speed, beat first 5 ingredients and 1/2 c packed brown sugar until just mixed; at medium speed, beat 2 minutes (mixture will look dry). With lightly floured hands, shape mixture into a ball, then pat into 8"by 8" baking pan. In small bowl with hand beater, beat eggs with 1/4 cup packed brown sugar; stir in almonds and coconut. Pour evenly over mixture in pan. Bake 35 minutes or until toothpick comes out clean. Cool in pan on rack. Cut into 12 pieces

Baileys Irish Cream Bars

1 Pkg yellow cake mix -- Moist Deluxe
3 eggs
2/3 Cup Bailey's Irish Cream
1/3 Cup oil
For Swirl:
1 Can cream cheese frosting
= Vanilla Creamy
1 Pkg white chocolate chips
1/4 Cup Bailey's Irish Cream
Preheat oven to 350. Prepare a jelly roll pan (about 15" x 10" x1"). Mix cake mix with eggs, Irish Cream and oil. Set aside 1/2 cup of prepared cake batter for swirl. Pour cake batter into prepared pan. In a small bowl, blend all swirl ingredients. Drop large spoonfuls of this mixture over the cake batter. Swirl with a fork to make a marble effect. Bake 25 - 30 minutes. Cool and cut into squares

2 Cups all-purpose flour -- sifted
2 Teaspoons baking powder
1/2 Teaspoon salt
1/4 Cup shortening
1 Cup granulated sugar
2 eggs
1 Cup mashed bananas
1/2 Teaspoon lemon extract
1/2 Teaspoon vanilla extract
1/2 Cup chopped nuts
powdered sugar frosting
Preheat oven to 350 degrees; grease an 8 x 13-inch baking pan. Sift together the flour, baking powder and salt. Cream together the shortening and sugar; add the eggs, beating well. Add the dry ingredients alternately with the mashed bananas. Add the lemon and vanilla extracts and the nuts; beat thoroughly. Spread the batter in the prepared pan and bake for 30 minutes. While still warm, frost with a thin powdered sugar frosting. When cool, cut into bars or squares. Variation. Banana Drop Cookies: Drop the dough by teaspoonfuls onto greased cookie sheets and bake for 12 to 15 minutes at 350 degrees. Makes 4 dozen

Banana Marshmallow Squares

1/2 Cup Butter

1 Cup Nuts -- chopped
FILLING**
3 1/4 Cups Miniature marshmallow
1 Small Instant vanilla pudding
2 Ripe bananas -- mashed
CRUST: Preheat oven to 350~. Grease 9x13" pan. In large bowl combine cake mix, butter, eggs and nuts. Blend well. Press 1/2 into bottom of pan; reserve remaining for topping. FILLING: In double boiler, melt marshmallows, stirring constantly, until smooth. Add dry pudding mix and bananas to melted marshmallows. Spread evenly over dough. Frosting:
4 Cups powdered sugar
1/2 Cup butter
1/4 Cup milk
2 Teaspoons vanilla extract

Shaved Into Small Pieces
Preheat oven to 350 degrees; grease and flour a 15 x 10 x 1-inch jelly roll pan. In a large mixer bowl, combine the flour, sugar, bananas, butter, eggs, baking powder, baking soda, salt and vanilla extract. Beat on low speed, scraping the bowl often, for 2 to 3 minutes until well mixed. Stir in the chocolate chips. Spread in the prepared pan. Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Cool completely. For the frosting, combine the powdered sugar, butter, milk and vanilla extract in a mixer bowl. Beat on medium speed, scraping the bowl often, until light and fluffy. Frost the bars. Sprinkle shaved chocolate over the top. Cut into bars. Penny Halsey

Black And White Cheesecake Bars

Crust:
12 Ounces chocolate chips
1/2 Cup butter
2 Cups graham cracker crumbs
Filling:
8 Ounces cream cheese -- softened
1 Can sweetened condensed milk
1 egg
1 Teaspoon vanilla
Preheat oven to 325 F. In a medium saucepan, over Very Low heat or in Microwave on Power 6 melt the chocolate chips and butter. Stir until smooth. Stir in the graham cracker crumbs. Reserve 1/4 cup of crumb mixture and press rest in a 13x9" baking pan. In a large bowl with electric mixer, beat cream cheese until smooth. Gradually beat in the condensed milk, then the egg and vanilla. Pour the mixture over prepared crust. Sprinkle with reserved crumbs and bake at 325 f. for 25-35 minutes until set. Cool completely to room temperature on a wrie rack, then refrigerate for 2 hours or longer. Cut into 24 squares

Black Walnut Bars

1 Cup Light brown sugar
Lightly Packed
1 Cup Butter Or Margarine
1 1/2 Cups All purpose flour
Top Layer:
2 Cups Light brown sugar -- lightly
packed
4 Large Eggs -- well beaten
2 Teaspoons Vanilla extract
1/2 Teaspoon Salt
2 Tablespoons Flour
1/2 Teaspoon Baking powder
3 Cups Black walnuts -- chopped
Cream the sugar and butter together in a large bowl until well creamed then add the flour thoroughly. Spread evenly in a greased 9x13-inch pan. Bake in a preheated 350~ oven for 5 minutes. It will look bubbly with holes all over, but this is fine. Let cool while making the top layer. For the top, cream the brown sugar and eggs together until light and fluffy. Add the vanilla. Sift the salt, flour, and baking powder together in another bowl and add to the egg mixture. Fold in the nuts and pour over the baked bottom layer. Return to oven and bake at 350~ for 20 minutes or until light brown on top and firm to the touch. Cool and cut into bars. DO not cut them too thin or they will crumble. These keep well if stored in an airtight container. Yield 3-4 dozen 1x2-inch bars. Note. If you cant find black walnuts regular walnuts or pecans can be used

1 Cup Brown sugar -- firmly packed
1 Cup Butter or regular margarine
4 Eggs
2 Cups Brown sugar -- firmly packed
2 Teaspoons Vanilla
2 Tablespoons Flour
1/2 Teaspoon Baking powder
1/2 Teaspoon Salt
2 Cups Black walnuts -- chopped
Mix together 2 cups flour and 1 cup brown sugar in large bowl. Cut in butter until crumbs form. Press into well-greased 15 1/2 x 10 1/2 x 1" jelly roll pan. Bake in 350 oven 10 minutes. Remove from oven and cool slightly, about 10 minutes. Turn oven temperature to 375. Beat eggs until light. Gradually beat in 2 cups brown sugar, then vanilla. Stir together 2 tablespoons flour, baking powder and salt. Add to egg mixture along with nuts. Spread over baked crust in pan. Bake in 375 oven about 20 minutes or until light brown. 1/4 Cup Baking cocoa
In a mixing bowl, cream butter and sugar. Add egg and vanilla; beat until thoroughly combined. Blend in the bananas. Combine the flour, baking powder, baking soda and salt; add to creamed mixture and mix well. Divide batter in half. Add cocoa to half; spread into a greased 13x9x2-in. baking pan. Spoon remaining batter on top and swirl with a knife. Bake at 350~F. for 25 minutes or until the bars test done. Cool

Blueberry And Lemon Crumb Bars

1 1/2 Cups all-purpose flour -- unbleached
2 Tablespoons sugar
2 Teaspoons grated lemon rind
1/4 Teaspoon salt
1/2 Cup cold butter -- cut in 1/4" slices
1 Large egg yolk
1 Teaspoon vanilla extract
1 Tablespoon cold water -- optional
--FILLING--
1/2 Cup sugar
2 Tablespoons all-purpose flour -- unbleached
1/4 Teaspoon freshly ground nutmeg
2 Cups blueberries -- rinsed and sorted
--TOPPING--
5 Tablespoons soft butter
1/2 Cup packed light brown sugar
3/4 Cup all-purpose flour -- unbleached

Oven 400F / 200C. Butter is unsalted unless otherwise stated. Lightly butter a 13- x 9-inch baking pan. TO MAKE THE CRUST: Combine flour, sugar, lemon zest and salt in the bowl of a food processor. With the motor running, add pads of cold butter, a few at a time. In a small cup, stir together the egg yolk and vanilla. With the motor running, gradually add the yolk mixture; process until the mixture pulls together. If the mixture seems dry, add some to all of the cold water. Turn dough out (it will be crumbly) into the prepared pan; with floured fingertips, carefully press the dough into an even layer over the bottom of the pan. TO MAKE THE FILLING: In a large bowl, stir together the sugar, flour and nutmet until blended. Add the blueberries; stir to coat. Spread the blueberry-sugar mixture into an even layer over the crust. TO MAKE TOPPING: Work the butter and sugar together with a wooden spool until blending. Using a fork, gradually add the flour, stirring until the mixture resembles coarse crumbs. Sprinkle the mixture evenly over the blueberries. BAKE for 15 minutes. Reduce the oven temperature to 350 degrees, and back for 25 to 30 minutes longer, or until the edges and topping are browned and the blueberries are cooked. Cool on a wire rack before cutting into bars. Lightly sprinkle with powdered sugar before serving

1 Cup blueberries

1/2 Teaspoon cinnamon
1/4 Teaspoon salt
Preheat oven at 350. Prepare a 8" square pan with cooking spray and flour. To prepare crust, combine 1 cup flour, margarine, and powdered sugar in a mixing bowl. Spread over bottom of prepared pan. Bake for 20 to 25 minutes. Meanwhile, to prepare filling, combine, egg whites, lemon juice, and vanilla in a small mixing bowl. In a larger mixing bowl, combine sugar, remaining flour, blueberries, coconut, baking powder, cinnamon, and salt. Spread over top of baked layer. Bake another 30 minutes. Cut into 2" bars when cooled.

Blueberry Picnic Bars

1 1/2 Cups quick-cooking oats
1/2 Cup all-purpose flour
1/2 Cup light brown sugar -- packed
1/4 Teaspoon baking soda
1/8 Teaspoon salt
3/4 Stick unsalted butter or margarine
melted
Filling:
1 1/2 Cups blueberries -- rinsed & patted dry
3 Tablespoons sugar
2 Teaspoons cornstarch
1 Teaspoon lemon juice
Heat oven to 350. Line an 8-inch square baking pan with foil, letting ends extend above pan on 2 sides. In a large bowl, mix oats, flour, brown sugar, baking soda and salt. Add melted butter and stir with fork until evenly moistened (mixture will be crumbly). Reserve 1/2 cup crumb mixture for topping. Press remaining mixture evenly and firmly over bottom of ungreased, foil-lined pan. Bake 12 minutes to set crust. Meanwhile preapare Filling: In a small saucepan stir berries, sugar, cornstarch and lemon juice over medium heat until simmering. Simmer, stirring occasionally, until juices are no longer cloudy, about 2 minutes. Spoon over crust. Crumble reserved crumb mixture over top. Bake 30 minutes until top is well browned and filling is bubbly. Let cool completely in pan. Lift foil by ends onto a cutting board. Peel off foil; cut in 2- inch squares
