Beef Menu for Week 1

BEEF MENU


Chicken Fried Steak with Gravy
Mashed Potatoes
Bacon Green Beans
Fudge Cake

CHICKEN FRIED STEAK with GRAVY
1 tsp salt
2 tsp pepper
12 cube steaks (make your own...much cheaper :)
3 sleeves of saltine crackers, crushed
4 cups flour (divided)
1 1/2 tsp baking soda
4 tsp salt (divided in half)
4 tsp pepper (divided in half)
1 1/2 tsp red pepper
14 cups of milk (yes, it's a lot.... use dry milk)
6 large eggs
oil for cooking

Sprinkle salt and pepper on steaks. Set aside.
Combine cracker crumbs, 3 cups flour, baking powder, 2 tsp salt, 2 tsp pepper, and red pepper.
Whisk together 3 cups milk and eggs. Dredge steaks in cracker mix, milk, and cracker mixture again.
Heat oil sufficient to cook steaks in a heavy pan. Fry steaks 10 minutes, flip, fry 5 more minutes till golden brown. Remove to wire rack on a cookie sheet and keep warm in 225 oven till ready to serve.
Carefully drain off the oil, reserving the bits left from the steak and 3 or 4 Tbsp of drippings.
Whisk together remaining flour, salt, pepper and milk. Pour into the skillet, cooking over med-high stirring constantly for 10-12 minutes till thickened.

 

BACON GREEN BEANS
1 lb green beans (more if your kids love them like mine)
6 slices of bacon, fried and crumbled
salt and pepper
butter

Cook green beans in boiling water till tender.
Stir in the green beans, butter and season to taste.

 

FUDGE CAKE
2 pkgs Butter Fudge Mix
2 cups cour cream
8 eggs
1 cup milk
1 cup oil
1 lg box Instant chocolate pudding mix
1 lb chocolate chips
1 bar dark semi-sweet chocolate or German chocolate, grated
Preheat oven to 350
grease and flour large baking pan


Beat eggs well, add milk, oil, sour cream and mix. Add cake mix, chocolate pudding mix and combine well. Fold in the chocolate chips and grated chocolate. Pour into pan.
Bake for 1 hour. Let sit before serving.
