Chicken Menu for Week 4
CHICKEN MENU
Quick Chicken Mole
Turmeric Rice
Tortillas (warm) or Flatbread
Garden Salad with House Dressing
QUICK CHICKEN MOLE
6 tsps unsweetened cocoa powder
2 Tbsp chili powder
2 tsp cumin
1 1/2 tsp oregano
1 26oz can spagetti sauce
(I like garlic and roasted red pepper)
1 large onion, diced
6 cloves garlic, minced
2 lbs chicken breasts, cut into strips or bite size pieces
8 oz green chilis, diced and drained
chopped tomato (optional)
Combine cocoa powder, chili powder, cumin and oregano in oven-safe
pot. Stir in the tomato sauce, onion and garlic. Heat through,
stirring occasionally till mixture bubbles. Stir chicken and
chili peppers into tomato sauce. Bake in 325 oven till chicken
is cooked through... about 20 minutes. Garnish with diced tomato
when you serve.
Turmeric rice
6 cups of cooked rice
2 Tbsp turmeric
1 tsp salt
1 tsp paprika
1 cup chopped green onion
Stir spices and green onion into the hot cooked rice. Serve
immediately with chicken mole.
