WINTER PUNCH: Mix together 1/2 cup Savannah Cinnamon Mix (I usually don't push brand names, but SCM is wonderful stuff and i can't think of a substitute) and 1/2 gallon apple cider. Heat in a crockpot. It's good just like this, but it can be spiked with rum, bourbon or brandy.

This can also be served cold as a punch.

LOW CAL BAKED APPLES

Core six apples (Staymens and Winesap are best) and peel them abouto ne third of the way down. Place in a baking dish. Sprinkle with cinnamon. Pour one can of Diet Sprite over the apples and put about one teaspoon of Savannah Cinnamon Mix in the center of each apple. bake at 350 for about an hour. Delicious hot or cold.

APPLE CAKE:  I got this recipe from a friend, Marion Evans.  I tasted it at her house one night when my book discussion group met there, and it was so good every person there had a large second helping.  Not only is it good, it's also easy to make.

  •      2 cups sugar

  •      1 1/2 cups oil  

  •     3 eggs     

  • 2 teaspoons vanilla     

  • 1/2 teaspoon each/ nutmeg, cinnamon, mace

  •      3 cups flour

  •      1 teaspoon soda

  •      1 teaspoon salt

  •      1 cup raisins

  •      1 cup chopped walnuts

  •      2 cups peeled, chopped apples

 Stir together flour, soda, and salt and set aside.  In a large bowl, mix together the rest of the ingredients.  Add the flour mixture and mix well with a wooden spoon.  Pour into a greased, floured bundt pan.  Bake 1 hour at 350 degrees.  Cool 10 minutes, put on plate, and poke about 30 holes in the cake.  Pour warm glaze over cake.

GLAZE      Mix together 1/2 stick butter, 1/2 cup brown sugar, and 1/8 cup milk in a pan and bring to a boil.   Cool slightly and pour over cake.


VALERIE'S APPLE BROWN BETTY: Fall in Pennsylvania is one of the most beautiful seasons of the year--it's the time my family enjoys driving into the mountains to enjoy nature's spectacular color show, and we always stop at one of the many roadside fruit stands to purchase a bushel or two of Pennsylvania's wonderful apples. This recipe is a traditional American dish, which is just perfect for serving on a cool fall evening.

Mix together lightly with a fork and set aside:

  • 4 cups coarse fresh bread crumbs

  • 1/2 cup melted butter

  • Core, peel, and slice 4 large tart apples

  • Mix together and combine with apples: 1/2 cup brown sugar 1/4 teaspoon nutmeg 1 teaspoon cinnamon Grated rind and juice of 1/2 lemon

Butter a 2-quart casserole or baking dish. Put a layer (about 1 cup) of buttered bread crumbs in it.Top with 1/3 of apple mixture. Spread another cup of bread crumbs and top with half of remaining apples. Make a third layer (1 cup) of bread crumbs and top with remaining apples. Cover with the rest of the crumbs. Sprinkle with 4 tablespoons dry sherry or hot water.

Cover with foil. Bake 30 minutes at 350 degrees. Uncover and bake about 30 minutes longer, or until brown on top. Serve warm with heavy cream or whipped cream if you're not a traditionalist.
