In a large pan, saute' celery, garlic, mushrooms & carrots in butter until tender. Add fish and saute until just done. Combine all the ingredients in a large pot, bring to simmer, stirring occassionally. Add water to thin as desired but allow to be thick. Serves 8 to 10. In a bowl, marinate blackfish in jerk sauce mixed with a dash or two of pepper sauce. Set aside. Dice one onion and tomato. Bring two cups water to boil and add 1 tablespoon butter. Add rice to water and reduce to simmer. Add corn, beans, tomato, half of onion, half of garlic, salt, cilantro and/or curry, oregano, paprika, and a few dashes hot pepper sauce. Cook rice until done. In a large frying pan with medium heat, lightly saute' remaining onion in two tablespoons butter with a little oil, then add garlic. Saute' a little more. Add blackfish evenly over onions and garlic so all fish pieces can be seen. Drizzle remaining marinade over fish and turn each piece to cook evenly. Serve next to or over rice. Serves two.
