ABC Irish Pork Chops

This is a simple recipe for pork chops from a book called Campus Survival.  The book is filled with simple but delicious recipes

ABC Irish Pork Chops

4 center cut pork chops -- 1/2 inch thick
1 large onion -- chopped
1 large clove garlic -- minced
1 teaspoon butter
salt
pepper

In large skillet, melt butter over medium heat and brown chops on each side, 5-7 minutes in all. Remove from skillet to a plate. Put onion and garlic in skillet and let fry 3 minutes, till limp but not brown. Push onions to one side of skillet. Return chops to skillet. Smother them with onions. Dust lightly with salt and pepper. Cover with lid and cook on low, 45 minutes.
