This is always popular at holiday meals. It was given to me by a friend many years ago.

Broccoli Casserole

1 large onion -- chopped

1 stick butter

2 boxes frozen chopped broccoli

8 ounces cream cheese

1 can cream of mushroom soup

1 sleeve Ritz crackers

Saute onion in one stick of butter. Cook frozen broccoli. Drain the broccoli and place in large mixing bowl. Add cream cheese, stirring until all lumps have dissolved. Add the cream of mushroom soup. Drain onions from the butter but reserve the excess butter. Put onions in broccoli mixture. Crush sleeve of Ritz crackers and add reserved butter to moisten. Put broccoli in casserole and cover with crakers. Bake at 350 for 30 minutes.
