Carrot Pineapple Bread

My good friend Sarah is a wonderful cook.  I was looking for bread recipes at Christmas time and she was kind enough to share this one with me.

Carrot Pineapple Bread

1 teaspoon baking soda

3 cups all-purpose flour

1 teaspoon salt

2 cups sugar

1 1/2 teaspoons cinnamon

3 eggs -- beaten

1 cup vegetable oil

1 cup crushed pineapple -- drained

1 cup carrots -- grated

2 teaspoons vanilla

1 cup chopped nuts

Preheat oven to 325 degrees. Grease well two 9 X 5 X 3 inch loaf pans. In large bowl, sift together first 5 ingredients. Mix in the remaining ingredients. Pour into pans. Bake one hour.
