My very close friend Wendy shared
this recipe with me several years ago and we've been enjoying it ever since.
Wendy's Chicken with Apples
6 chicken breasts -- boned and skinned
1 1/2 cups finely diced apples
1/4 cup golden raisins
1/4 cup walnuts
3 tablespoons minced onion
1/2 teaspoon sage
Glaze:
1/4 cup orange juice, from frozen concentrate
1/4 cup butter
1/3 cup apple jelly
1/4 cup dry sherry
Pound breasts to 1/4 inch. Mix together apples,
raisins, walnuts, onion and sage. Put equal portions of stuffing on each breast and roll,
securing with toothpicks if necessary. Place breasts in oven-proof baking dish.
In small saucepan, combine ingredients for glaze.
Cook over low heat until blended. Pour glaze over breasts. Bake uncovered at 350 for 45
minutes. Brush with glaze frequently.
