WASSAIL

5 gallon apple juice
10 cup orange juice
10 teaspoons whole cloves
10-3 inch stick cinnamon
3 1/3 cup sugar

Mix apple juice and orange juice together. Then add sugar. In some cheese cloths tie up your spices.
Let simmer 5 hours. Remove the spices before serving. Server while still hot.

Makes 160 servings.

CORN BREAD

6 quarts of flour
4 1/2 quarts cornmeal
1 1/2 cup less 1 1/2 Tablespoons baking powder
3 Tablespoon salt
3 cup dry milk
4 1/2 cup sugar

Mix 5 minutes at low speed then add:

36 eggs
3 quarts and 1/2 cup water
4 1/2 cups of oil

Mix enough to moisten. Pour into greased pans. Bake 20 minutes at 350.

Makes 150 servings.

MOLASSES COOKIES

6 3/4 cups sugar
6 3/4 cups shortening
9 eggs
2 1/4 cups molasses
18 teaspoons baking soda
1 1/2 teaspoons salt
3 Tablespoons cinnamon
3 Tablespoons ginger
18 cups flour

Mix all ingredients. Shape into small balls, if dough is hard to handle add more flour as needed.
Roll in sugar and place on cookie sheet. Bake at 350 for 8 minutes.

CHEESE AND NOODLE CASSEROLE

10 pounds of noodle
2 1/2 cups oleo
2 1/2 cups chopped green onions
2 1/2 cups flour
2 1/2 teaspoons salt
5 teaspoons paprika
5 teaspoons dry mustard
25 cups milk
10 cups shredded American cheese
40 drops hot sauce
80 to 100 slices ham

Cook noodles and drain. In the mean time mix everything but the ham. Melt oleo, then add flour.
Then add milk , cook until thick. Add cheese, green onions, salt, dry mustard, paprika, cook until
cheese it melted. Then add ham and noodles to the sauce. Pour into you baking pans and bake at
350 for 30 minutes. Or until bubbly and brown.

OCTOBER FEAST CASSEROLE

60 medium potatoes - cooked
5 cups chopped onion
5 cups oleo
5 cups plus 13 1/3 Tablespoons flour
10 teaspoons salt
5 teaspoons pepper
5 teaspoons thyme, crushed
40 cups milk
10 lbs smoked sausage, thinly sliced
20 cup frozen peas, rinsed and drained
60 Tablespoons dry bread crumbs
20 Tablespoon oleo, melted


Pare potatoes, set aside. Cook onion in 5 cup oleo. Blend in flour and seasoning. Gradually add milk,
stirring until smooth. Cook stirring constantly until mixture is slightly thickened. Place half of sausage
in bottom of steam table pan. Add half of potatoes, half of peas and half of sauce. Repeat layer with
remaining ingredients, ending with sauce on top. Combine crumbs and oleo, sprinkle over sauce. Bake
at 350 for 20 to 30 minutes or until crumbs are lightly browned.

Makes 50 servings.
