This recipe is adapted from one that my friend Wendy gave me years ago. You simply can't stop at just one of these cookies.
Heavenly Chocolate Chip Cookies
1/2 cup butter -- softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 teaspoon vanilla
3/4 cup oatmeal -- powderized
1 cup flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 cup chocolate chips or chunks (I like milk chocolate best)
Preheat oven to 375 degrees. Cream together the butter, sugar and brown sugar. Blend in the egg and vanilla. In separate bowl, mix together powderized oatmeal (I powderize it in the food processor), flour, salt, baking powder and baking soda. Combine dry ingredients with butter mixture. Add chocolate chips and stir to mix. Make golf ball sized mounds and place 2 inches apart on an ungreased cookie sheet. Bake at 375 degrees for 6-10 minutes(check after 6 minutes to see if they are done to your liking). This makes approximately 2 dozen cookies.
