I got this recipe from a good friend of mine, named Julia. It's the perfect pasta salad to bring to barbecues and cookouts. Thanks Julia!
Pizza Pasta Salad
1 lb. macaroni, cooked, spiral
3 medium tomatoes -- seeded and diced
1/2 lb. cheddar cheese -- cubed
1/2 lb. mozzarella cheese -- cubed
1 bunch green onions -- sliced
3 oz. pepperoni slices
1 can black olives -- sliced or whole
3/4 cup vegetable oil
2/3 cup parmesan cheese -- grated
1/2 cup red wine vinegar
2 tsp. dried oregano
1 tsp. garlic powder
1 tsp. salt
1/4 tsp. pepper
croutons -- optional
In a large bowl, combine macaroni, tomatoes, cheddar cheese, mozzarella cheese, green onions, pepperoni, and olives. In a small bowl, combine oil, parmesan cheese, vinegar, and seasonings. Pour over macaroni mixture. Cover and refrigerate for several hours. Top with crouton just before serving, if desired. Serves 16.
*Note: Add the pepperoni right before serving to keep the color nice and red. You may also substitute bottled Italian salad dressing.
