Shrimp Ball

It wouldn't be Christmas without the Shrimp
Ball! This recipe hails from The Best of
the Best from Virginia.
Shrimp Ball
2 6-8 oz packages small frozen shrimp -- fully cooked
2 8 oz packages cream cheese -- softened
1 teaspoon minced onion
1/4 teaspoon garlic salt
1 teaspoon hot sauce -- to taste
mayonnaise to moisten -- (about 2 Tablespoons)
salt -- to taste
chopped parsley -- dried or fresh
Thaw and drain shrimp well (press in paper towels to remove all water). Combine cream
cheese, onion, garlic salt, hot sauce, mayonnaise, and salt, if needed. Add shrimp and mix
well. Form into a ball; wrap in plastic wrap. Chill until ready to serve. Sprinkle with
chopped parsley. Serve with assorted crackers. Makes 1 ball.
Hint: Make a day ahead so flavors will blend. Tips for garnish: Instead of sprinkling with
chopped parsley, top ball with shrimp and garnish base with fresh parsley. For Christmas,
sprinkle ball with parsley and paprika.
