Who does not know of the traditional German love of family life. The three K's of "kuchen" "kirche" and "kinder" i.e. "cake" "church" and "children" are known to every student of German precisely because of that love. The fairy tales, poems, and children's stories only add to this image of the German family. Many of us treasure fond memories of standing beside our grandmother, learning our first baking lessons, and hoping to get the bowl to lick.

Apple Our first authentic German recipe is for a traditional German apple cake.


GEDECKTER KUCHEN or GERMAN APPLE CAKE



This is a very popular cake in Northern Germany. If I said this recipe has been handed down from my wife's grandmother to her mother to her, it would sound intriguing; but it would be a tall tale.

It is actually a recipe from a cookbook called Dr. Oetker Backbuch. The English translation of the title escapes me. Actually I have no idea what it means.

I can tell you that my lovely wife has been making this German Apple Cake for most of the thirty four years of our marriage and I never tire of it. It is one of those fantastic German cakes.

			Note: 28 Grams = 1 ounce

   
INGREDIENTS

BOTTOM: BASE

375 g	Flour
 12 g   Baking Powder
  1     Egg White
  5 tbsp Milk or Water
150 g	Butter or margarine

MIDDLE: FILLING

4-6 Apples
    Sugar Sprinkle

TOP: ICING 

224 g Icing Sugar
2-3 tbsp Lemon Juice

Combine the first Five Bottom Base ingredients in a large bowl.
Stir the mixture until it is smooth. 
Mix in the Butter and knead into a smooth dough. 
Cut into two even portions.
Roll one portion into a greased square baking pan or dish.

Peel, core and cut the apples into slices. 
Arrange the slices on top of the dough in the baking pan. 
Sprinkle with sugar.

Roll out the second portion of dough and cover the apples with it.
Brush with milk or water.
Bake in the oven at 375F for 30 minutes until golden brown.

Mix the icing sugar and lemon juice. Drizzle all over the top
of the baked cake.

EASY CHEESE CAKE

I would not bet that this is an authentic German recipe but I do know that this Cheese cake is a quick and easily made dessert to test your taste buds. I assure you that it will disappear in less time than it took for you to make it. This is my favorite cheese cake and I must hold myself back so our company can also enjoy this treat.

   
Ingredients

BOTTOM SHELL

1 1/2 Cups Graham cracker crumbs
   1/4 Cup  Sugar
   1/4 Cup  Melted Butter.
 
MIDDLE FILLING

2 oz Package - Dream Whip
1/2 cup      - Icing sugar
4 oz package - Cream Cheese such as Philadelphia


TOPPING

1 Tin - Pie Filling your choice (cherry is nice)
1 tub - Cool Whip        
 
Mix all three Bottom Shell ingredients. 
Save a 1/4 cup for later use. 
Place the remaining mixture into a 8x8 pan.
Bake for ten minutes at 350  F.

Whip the Dream Whip. 
Add the 1/2 cup icing sugar and the Cream cheese.
Mix all three ingredients until it is creamy. 
Pour into the baked Bottom Shell and spread smooth.
 
Spread your choice of pie filling over the top ensuring
the whole middle filling is covered. 
Then cover the pie filling with cool whip. 
Sprinkle the saved shell mixture on top of the cool whip.

This is a dessert after all, so don't bother to count the calories. Just savor the taste.
