Perhaps one of the best things from the grill is Swordfish Steak.
I've managed to hook up with
a local seafood market that has the best sword you will find anywhere
in the Atlantic Ocean.
To enhance the flavor of the Sword, try marinating for about 30 minutes in some Lemon juice with your choice of herbs & a splash of Olive Oil. Let the flavors blend together and it is absolutely magnificent.
Grilling a Sword Fish is similar to grilling a Beef Steak.
First, use hardwood charcoal in the grill. Use newspaper or an electric starter, never use lighter fluid to start your fire as you will taste it in your food.
Let the embers get hot then form a white ash on top.
At this point add some Dry smoking chips to heat up the fire a little bit. My favorite for firm fish is something like alder or mesquite but a little bit of cherry wood can add an interesting flavor too .
Remove the fish from the marinade, pat dry, and place the sword on the hot fire and let it grill. Do not overcook!!!!! There is nothing worse than a dried out piece of fish. Flip after 2 minutes and let grill for another two minutes.
Place grilled steak on a plate garnished with fresh parsley and lemon slices.
I like to serve mine with baked potato, sour cream and fresh chives, and steamed asparagus spears. This recipe works well with Tuna and any firm fish.
