Shawn's Kugel Recipes:

We have a blended family with 6 children. Wendy and I don't have a whole lot of time with our busy schedules, but we do enjoy good food and company .The recipes below are relative quick and produce good results.

Kugel:

Ingredients:

  • 3 cups cooked noodles
  • 1 fast hora
  • 4 eggs (whites and yolks beaten seperately)
  • a pinch of swing
  • 1/4 vegetable broth (chicken broth)
  • Dried apricots
  • 2 teaspoons of reggae
  • Raisins (optional)
  • a 1/8 teaspoon of nutmeg mixed with cinnamon
  • Salt and pepper to taste
  • Add broth and egg yolks (well beaten to Asher Boro - in a reggae style) to the noodles;
    mix in egg whites. Season and dance a quick hora around the kitchen.
    Add apricots and raisins and warm oven to 350.
    Grease pan while singing "It had to be you".
    Add ingredients to the pan and place in the oven.
    Call all family members and dance to horas on your favorite CD (hopefully Shawn's Kugel)
    After 20-30 minutes of working up a shvitz, your kugel is ready to be served.
     
    Shawn's Kosher Enchiladas:
    This recipe was discovered when I needed to provide dinner and had odds and ends around the kitchen. After making it I realized I had a hit--enjoy
     
    Ingredients:
    5 potatoes (yukon golds are my favorite)
    1 onion
    1 red pepper
    garlic---2 cloves crushed
    your favorite fresh salsa
    Diced green chiles
    Cilantro--1/8 of a cup chopped
    1 tablespoon of fennel
    1 1/2 teaspoons of dill
    1 can of sliced olives
    3 cans of enchilada sauce
    1 can of tomatoe sauce
    3 cups of chedder cheese
    3 cups of monterey jack
    24 corn tortillias
     
    Dice potatoes, onion and red pepper.
    Saute in skillet /wok in olive oil/garlic
    after lightly browned at about 1 cup of salsa , diced chiles, olives, fennel, dill and olives
    let this simmer for about 30 minutes
    while this is simmering; heat up enchilada sauce /tomatoe sauce in large skillet and grate cheese
    heat oven to 375
    now you are ready for the messy part:
    dredge the tortillas in the enchilada sauce--fill with filling and add sprinkle of monterey jack,
    roll up and places in a greased pan.- when pan is full--cover enchaladas with chedder and a sprinkling of Jack---ladle enchilada sauce over the top and cook for 35 minutes (or until cheese
    is lightly browned) Serve with rice and beans .
     

    Quick Lasagna

    Ingredients:
    Fresh spinach (or frozen chopped)
    Onion--chopped
    1 ball of mozzarella
    2 eggs
    lasagna noodles
    1 large container of ricotta cheese
    4 medium cans of tomatoe sauce
    2 cloves of pressed garlic
    salsa (optional)
    basil to taste
     
    saute onion and garlic in olive oil at medium heat
    add tomatoe sauce (salsa) and basil
    clean spinach
    grate cheese
    in mixing bowl empty ricotta cheese
    add 2 eggs--pepper to taste and mix
     
    place uncooked lasagna noodles on the bottom of greased big flat pan
    spread some ricotta over noodles
    layer some spinach over ricotta
    ladle sauce over spinach
     
    do this about 3 layers----then top with cheese and cook for 60 minutes---
    It is amazing--the noodles are soft--they cook in the sauce
     
    enjoy with wine and good bread
     
     
     

    Saturday Fritatta

    After the children have been fed and are busy chasing each other it is time to endulge !!
     
    Ingredients:
    3 eggs
    1 cup of chedder cheese
    Chopped chives (or onion)
    1/4 cup of salsa
    small can of sliced olives
    diced mushrooms
     
    In bowl beat eggs and add a little water (or milk)
    Stir in salsa , chives, olives & mushrooms and 1/2 the cheese
    pour ingredients into lightly oiled skillet (at medium)
    Cook until bottom appears to be almost done--remove and add cheese on top
    Place in broiler at high---takes about 4 minutes--till cheese is brown
    Serve with Shawn's hashbrowns
     
    Shawn's hashbrowns:
    Ingredients:
    potatoes
    marinated artichoke hearts
    onion
    sour cream
    dill and fennel
     
    Dice potatoes and onion
    saute in olive oil
    add dill and fennel to taste
    add artichoke hearts--once potatoes are lightly browned
    cook for 3-4 minutes
    serve with sour cream on top
