Omelette/ Omleta
For one person: 2 eggs, 2 tablespoons milk, 1/2 teaspoon butter or lard, salt
Break the eggs into a bowl, beat until foamy, mix the milk and salt and then pour in the hot buttered pan. Fry at low temperature, and after the bottom has started to brown a little, turn onto the other side and let it brown too. When it is ready, roll like a jelly roll and place onto the plate. Omelette with apples/ Omleta cu mere
For one person: 2 eggs, 4 oz/100 g grated apples, 1 tablespoon sour cream, 1 teaspoon butter, sugar
Beat the eggs, add sour cream and peeled and grated apples, mix and fry in the hot buttered pan. Serve hot with powdered sugar on top.

Omelette with cheese/ Omleta cu brinza
For one person: 2 eggs, 2 oz/50 g grated cheese, 1 tablespoon sour cream, 1 teaspoon butter, parsley
Prepare the same as omelette with ham, replacing the ham with grated sheep's cheese. When it is slightly browned on both sides, roll like a jelly roll, put some chopped parsley on top and serve immediately. It may be prepared with some other types of cheese. In this case, prepare like a simple omelette and when ready, spread the cheese on top and roll.

Omelette with ham/ Omleta cu sunca
For one person: 2 eggs, 2 oz/50 g ham, 2 tablespoons milk or 1 teaspoon sour cream, 1 teaspoon lard, salt
Beat the eggs until foamy, add the milk or sour cream and the salt. Cube the ham, mix it with the beaten eggs and fry everything in hot lard, first on one side, then the other. You may replace the ham with bologna. Serve immediately. Back to Omelette with cheese

Prepare like the simple omelette, replacing the milk with the sour cream. Serve immediately.

For one person: 2 eggs, 2 tablespoons milk, 1 teaspoon butter or lard, salt

Scrambled eggs, Transylvania style/ Oua jumari preparate ardeleneste
For one person: 2 eggs, 3 oz/80 g slab smoked bacon, salt
Cut the bacon to make some indentations in it. Fry well on all sides. When it starts to become crispy, pour the beaten eggs with the salt, mix with the fork and serve immediately.

Prepare like scrambled eggs, adding grated sheep's cheese to the beaten eggs mixed with sour cream.

Scrambled eggs with eggplant/ Oua jumari cu vinete
For two persons: 1 medium eggplant, 4 eggs, 2 tablespoons oil, salt
Wash, dry the eggplant, cube it, salt it and let it sit for 20-30 minutes. Then wash it and drain well. Fry in hot oil until soft. Pour the beaten eggs on top. Fry until the eggs are done (do not overfry). Serve immediately.

For one person: 2 eggs, 2 oz/50 g ham/bologna, 2 tablespoons milk, 1 1/2 teaspoon lard, salt
Beat the eggs, mix with the milk and salt. Fry the cubed ham in a little lard. Pour the beaten eggs in the pan, over the ham. Mix gently with the fork until the eggs are done. You may replace the ham with bologna. Serve immediately.

Prepare like scrambled eggs, adding sour cream and mixing it well with the beaten eggs.
