Almond Poppy Seed Muffins
1 1/2 cups flour
1 cup sugar
3/4 teaspoon baking powder
3/4 teaspoon salt
3/4 cup vegetable oil
3/4 cup milk
1 egg
1 teaspoon almond extract
2 tablespoons poppy seeds
Heat oven to 350. In a large bowl, stir the flour, sugar, baking powder, salt and poppy seeds together. In small bowl, whisk together the oil, milk, eggs and almond extract. Pour the milk mixture into the dry mixture and stir just until moistened. Fill prepared muffin tins 3/4 full. Bak 25-30 minutes until golden brown. Makes 12 muffins.
